首先
先弄清楚一個基礎文法概念
英文的簡單式有三種 -- 過去式 - 現在式 - 未來式
表示的意思分別是
過去式 - 過去做過的一個動作
現在式 - 表示一個不變的事實, 平常的狀況, 以及習慣
未來式 - 現在還沒發生, 未來會發生的事
過去式句子中的動詞一律使用過去式
未來式句子中一般來說, 在主詞後會有個助動詞 will , 一律使用原形動詞
問題來了
在現在式的句子中, 有個很特殊的用法
就是 -- 動詞三單現 --
也就是 -- 第三人稱-單數-現在式 -- 的動詞要加 s
我想不陌生的人稱有 - 你, 我, 他, 你們, 我們, 他們
我, 我們 - 就是所謂的第一人稱, 你, 你們 - 就是所謂的第二人稱, 他, 他們 - 就是所謂的第三人稱
其中
你, 我, 他 - 是單數
你們, 我們, 他們 - 是複數
因此
三單現 -- 第三人稱-單數-現在式 -- 中的 - 第三人稱-單數
指的就是 - 他, 她, 牠 (它) -- 也就是英文中的 -- he, she, it
從現在開始, 記住這個口訣: he, she, it --- s
前面落落長的解釋在說明 - 為什麼動詞要加 s
這裡有個更簡單的方法: 中文發音念 - ㄊㄚ - 的 - 他, 她, 牠 (它) -- he, she, it --- s
在此舉個例, 表示不同的人喜歡同一件事物的句子
I like playing the violin.
You like playing the violin.
He likes playing the violin.
She likes playing the violin.
It likes playing the violin.
We like playing the violin.
They like playing the violin.
同一個句型, 只有 - he, she, it - - ㄊㄚ - - ㄊㄚ - - ㄊㄚ - 後的動詞 like 有加 s
(當然啦, it - 一隻狗? - 拉小提琴是誇張了些)

2.He does not likes playing violin.
哪個才是正確的？還是2者均可？
應該是: He does not like playing the violin.
(1) do / does (助動詞) + v (原形動詞) 所以不加 s
(2) play + the + 樂器 → 彈奏... I like to play the piano.(我喜歡彈鋼琴。)
play + 球類 → 打...球 I do not like to play tennis.(我不喜歡打網球。)
(3) like + to v = like + v-ing (喜歡做某事)
若句子改為
1.He like playing violin.
2.He likes playing violin.
何者才是正確？
→ He likes playing the violin.
(He是三單，現在式一般動詞須加 s)

1.He does not like playing violin. 正確選項
=>does 後面應該接原型動詞，所以不是likes而是like.
下面那句
2.He likes playing violin. 正確選項
=>因為he是第三人稱單數，而且又沒有助動詞does在前面而且你看他的時間又是現在式，從likes看的出來，因為他並不是寫liked過去式，所以要加s.
主詞若為第3人稱、現在式、單數，動詞需加S
(以like為例子)
現在式
__________________________________________________
第三人稱單數
he/she/it likes
第1.2人稱和第三人稱複數
I/you/they like
__________________________________________________

When the verb like means enjoy, it’s followed by the -ing form. However, the expression would like (want to) is followed by the infinitive.
I like going abroad on marketing trips. (I enjoy this.)
I would like to go more often. (I want to go more often.)

So for your question, #1 is right.

1. He does not like playing violin. = He does not enjoy playing violin. = This means that he played the violin and he does not like it.

2. is wrong because you need to use 原形動詞 after "does"

Some verbs can be followed by either -ing form or the infinitive and the meaning of the verb changes.
For example:
I remember sending them the check
= I sent and I can remember now that did it.
I remembered to send them the check
= I remembered, and then I sent it.

第一句 → 1.He does not like playing violin. 是對的。
(著重『playing violin』這件事。)
另外：
He does not like to play violin. 也是對的。(著重『play』這動作。)
第二句 → 1.He does not likes playing violin. 是錯的。
(因助動詞之後的動詞，不論第幾人稱，皆為原形動詞。)

not後面不應該有likes
like playing 很不順
